Mimi Lo & Ada To Teach You How to be A Sweetie Pie!

For those born in the sixties and seventies, who grew up in the eighties, then they will remember the days of eating white sugar puddings, tub cakes, sugar cake and sharks fin bowls in the streets. These snacks are simple and packed with the tastes of growing up and eating them brings back all the memories. For Mimi Lo and Ada To, who will be holding an Eighties Concert "Floor Show" in September to relive the memories of the 80's, then making these foods brings back no end of enjoyment. Just a little time spent together, making cheesecakes and mango puddings creates new memories between friends.

Three Years Ago - My First Cheesecake

Everyone has their first time in the kitchen, or their first attempt at 'making something to eat' and for most people, their first culinary creation is usually a snack or a sweet, such as fruit jelly or ice lollies made from red bean soup.

For Mimi, who is renowned as 'a pretty good cook', her first time in the kitchen was making a dessert too. "Thre years ago, I bought a book in Taiwan about making desserts and then I decided to give it a try." After reading the recipes, Mimi found that making cheesecakes was the easiest, so she followed the instructions and made her first cheesecake. For her first creation, then of course her official taster was boyfriend Power Chan.

Mimi found that cooking was not as difficult as she had imagined, so she stepped onto the 'road to cookery'. From her first $80 toaster, her cooking utensil collection started building up and up to now, she can make some large cakes and numerous different tools of the trade that has brought Mimi much enjoyment along the way.

A Little Creativity, Makes A New Taste Style

Now, for Mimi, making cheesecakes is an easy task. "Cheesecakes that don't need baking are not hard to make at all, the more complicated ones are chocolate cakes and sponge cakes. Sponge cakes are especially hard because you have to whip the egg whites until they stand up and this is quite difficult."

To bring new tastes and textures to her cheesecakes, Mimi has experimented with adding different ingredients, such as strawberries and blueberries, which is her perfect complement. "I will make a paste with the strawberries and put this onto the base first before putting in the cream cheese. Then it is baked or chilled, but if you want convenience, you can use jam."

When she was younger, she loved to make jellies and puddings and Mimi still loves it now. Making a cup shaped pudding and sharing it with friends is great hosting and so convenient. "My boyfriend likes to eat durian, so I have mashed up the fruit and added it into a pudding. The texture isn't bad!"


Working Hard At Cooking For Boyfriend

Mimi admits that it is because of her boyfriend that she has been working so hard to learn to cook. However, good friend Ada To is the opposite in that her husband Sunny Chan has never needed her to cook, so after their marriage, she has never cooked a meal in their house. Ada laughs: "He is a very good cook and loves going to the market, when he sees fresh vegetables, he is very happy. I am very afraid of raw food, and he has never asked it of me, so I think this lack of motivation has led me to find little attraction towards cookery." Once again it proves that for a woman, the greatest influence is that of the man by their side.

Mimi's Cookery History

Talking with Mimi about cooking, she can go on for a long time, but it turns out that she has only really had three years of cooking experience. "When I lived with my parents, then the kitchen was my mother's private place. Only when I moved out with my boyfriend three years ago was I forced to cook our three meals a day and I learned to cook for myself."

As well as making cakes, Mimi has also used the oven to make cheese and garlic baked fish that turned out quite well. "I have been learning and cooking as I go along. Even if I ask my mum, her answer will always be 'put in salt, sugar and oil and then make a sauce with cornflour' as though everything is pretty much the same."

Master at Borsch Broth

Mimi's favourite food is Chinese and she is a master at making Borsch soup. Her secret is to put the beef in first to make it tender, then add in potatoes, carrots, tomatoes and then finally celery to avoid it becoming too soft. "My boyfriend likes to eat lamb steaks, so I learned to cook it. Now I know that the most important thing about frying lamb is to add some herbs."

No matter what the cuisine, for Mimi, the most important thing is: "Of course it is to cook it with your heart." Definitely, if there wasn't a passion, then there will definitely be something lacking in the final result.

Mimi's Recipes

Smooth & Creamy Mango Pudding Ingredients:
Jelly Powder - 1 box, 1 egg, Fresh Milk (or evaporated milk) 250ml, 2 Mangoes


Method:
1. Dissolve the jelly powder in 200 ml of hot water.
2. Add in 100ml of cold water and mix before adding the milk.
3. Crack the egg and add to the mixture whilst stirring.
4. Cut the mango into pieces and add to the mixture
5. Put the pudding into cups and put into refrigerator for the jelly to set. Add mango pieces when serving.

Mimi's tip:
Always remember to add cold water to the mix before adding the egg, otherwise the hot water will cook the egg.

Smooth and Tasty Cheesecake

Ingredients: 1 ready made cake base, 1 box cream cheese, yogurt (or sour cream) 200g, whipping cream 200ml, Sugar 80g, agar 5g, lemon juice, vanilla essence, strawberries (or cherries)

Method:
1. Let the cream cheese melt a little and whisk.
2. Add in sugar, yogurt and cream in that order as you whisk the mixture.
3. Add in a few drops of lemon juice and vanilla essence.
4. Melt the agar in some cold water and stand in hot water to warm a little before pouring into the mixture.
5. Pour the cheese mixture into the base and put into refrigerator.
6. After the cheese mixture has set, lay on strawberries or other decoration.


Mimi's tip:
Don't add too much vanilla essence otherwise it will taste bitter. Agar will make the cheese set harder, but remember to dissolve in cold water first.
